Surplus does not always have to be donated or discarded. Some ingredients can potentially become inputs for new food products — an additional path between donation and composting. Potential opportunities include prepared meals, sauces, soups, baked goods, packaged products, and institutional food production.

Product development will depend on food safety, ingredient suitability, operational capacity, and market demand.

The Hub model includes institutional meal production as a potential operating revenue stream — an opportunity to combine circular food recovery with commercial food production.

The current model anticipates institutional meals, upcycled products, and catering as near-term revenue streams.

Food that cannot safely remain in the human food system still has value. Organics can move toward composting partners rather than disposal — ensuring food moves down the recovery hierarchy only when higher-value pathways are no longer appropriate.
